At our restaurant, methods of traditional Southern Appalachian Foodways with the incorporation of Modern Technique, combined with regionally sourced products, are the influences that drive our culinary vision. We also incorporate certain elements of Japanese cuisine into our food philosophies. There is a direct correlation between Eastern/Southeast Asia and Southern Appalachia--Japan’s global position is roughly the same latitude as from Maine to Georgia, with Tokyo at the same latitude as North Carolina. Local, seasonal menu planning and preparation, revival of cooking methods well documented in our Southern Heritage, and farming practices and preservation once embraced by generations past, are put into place in our kitchen. Sourcing our produce and proteins hyper-locally, regionally, and farm-direct with sustainability is the backbone of our culinary credo. It is our belief that clean, honest food and genuine hospitality go hand in hand. That is the foundation of this restaurant.
