Here at Winged Elm Farm we work hard to adhere to sustainable practices. That means we maintain and improve our pastures using non-synthetic fertilization and minimally invasive farming techniques, grow a diverse mix of produce, cover crops, and livestock that are well suited to the East Tennessee climate and landscape, balance the animal-to-land ratio to best benefit both, and selectively harvest trees from our 25 acres of hardwoods. We grow and bale most if not all of our own hay. We raise one beef calf out annually, and a small group of feeder pigs a couple of times a year. Our cows eat primarily on our hay and pasture grass, with a small amount of grain to keep them friendly. Pigs live in the woods or paddocks, doing what they like to do best: eat grains, produce, and dairy and wallow, play, sleep, and snuffle for bugs, worms, acorns, and other edibles. We also keep a flock of meat sheep, and they spend their days in the pastures and their nights secured from predators. Lambs are born in the winter, and freezer lamb is typically available once a year, late fall–early winter. (We sell pork and beef as a half or whole; we sell lamb as a whole only.)
