Here at Winged Elm Farm we work hard to adhere to sustainable practices. That means we maintain and improve our pastures using non-synthetic fertilization and minimally invasive farming techniques; grow a diverse mix of produce, cover crops, and livestock that are well suited to the East Tennessee climate and landscape; work to balance the animal-to-land ratio to best benefit both; and selectively harvest trees from our 25 acres of hardwoods. When the weather cooperates, we grow and bale all of our own hay. We grow out a small group of feeder pigs a couple of times a year. They live in the woods or in large paddocks, with shelter from the weather, and they do what pigs like to do best: eat grains and produce, wallow, play, sleep, and snuffle for bugs, worms, acorns, and other edibles. We also keep a flock of meat sheep, and they spend their days in the pastures and their nights secured from predators. Lambs are born in the winter, and freezer lamb is typically available once a year, late fall–early winter. (We sell pork as a half or whole; we sell lamb as a whole only.)
