About Chivo Taqueria
Chivo Taqueria features our interpretation of tacos, fused with local ingredients. Relying on the concept of “nose to tail” whole animal usage and working directly with local farms, we use fresh, local ingredients to make creative, authentic dishes. We use various independent local farms for hogs and goats. We also use Snapps Ferry packing for processing our local meats. We use Hudson Farms of Graysville for produce and vegetables. We also use West End Berries during season. Much of our other purchases from local farms comes from us walking through the Market Square Farmers' Market and buying seasonal goods. We use fresh-squeezed juices for all of our specialty cocktails.
