Mt. Gilead and its French Broad Creamery offer a variety of fresh, bloomy-rind, and aged goat cheeses, generally made in the French and Spanish manner. The farm is home to a herd of about 75 goats -- mostly Nubians -- as well as a flock of Bresse chickens, a French heritage breed renowned for the flavor of its meat. Although not certified organic, Mt Gilead Farm practices organic and regenerative agriculture to the greatest extent it can. The goats are fed hay grown (without synthetic inputs of any kind) on the hills of the farm. During the day the animals are free to graze the hillsides and browse in the lower reaches of the wooded hill. From these sources they produce milk that is made into cheese which reflects the unique qualities of our farm at the head of Green Valley. In addition to the range of cheeses the French Broad Creamery has on offer, the farm produces berry jams and cajeta, a Mexican goat's-milk caramel sauce.
