The microBrothery is a BROTH PROCESSOR, located in Asheville. We produce a delicious BONE BROTH, sourced from our local ASAP poultry farmers. Our process is unique, using equipment and techniques more likely found in a brewery, so we like to say our broth is brewed, not boiled. We have 3 specific wholesale tracks: Direct to poultry farmers: We provide a value-added service at tailgate-friendly markup. Your poultry, your brand, your markets. We brew, bottle and label, packaged for you in frozen quart containers. Grocery: Your poultry, our brand, brewed for the chains and co-op markets. These are vacuum packed as individually frozen, single servings. Institutional: Your poultry, our brand, brewed for hospitals and recovery clinics. Packaging will be to clinical standards. To support entry into this market, we are “trialing” our bone broth with a selection of patients in a local family medicine clinic. Our grocery track has two lines: BROTHBEE and WHOLEBROTH. BROTHBEE is a bone broth, made from the broth cuts (head, neck, frame, wing tips, feet) of hybrid meat birds, usually Cornish Cross or Red Ranger. WHOLEBROTH is also a bone broth (in that it gels), but is made from whole heritage poultry, such as Freedom Ranger. We look forward to working with you, potentially developing broth from other breeds. All our broth is designed to be "belly friendly". We first pressure blanche our onions and leek to reduce fructan content (search: FODMAP), then cold filter our broth down to 5 microns for a silky finish. The result is not just delicious, but surprisingly tolerable by many health-challenged. The microBrothery operates an NCDA&CS-inspected, cGMP-compliant, FDA-registered facility in Haw Creek, just off the I-240 Tunnel Road exit.
