The Swamp Rabbit Cafe and Grocery was founded in 2012 by two women who were passionate about good food and the people who grow and make it. Starting out with no employees, this humble “mom and mom” shop now operates a bustling bakery, kitchen, cafe and grocery that employs 130 wonderful staff, buys from over 300 local farmers and food artisans, bakes thousands of stecca, our signature bread, per day (using King Arthur Flour!), and serves the amazing and dedicated community of Greenville and beyond. The Swamp is not just a restaurant and retail space - it is a true community space, with outdoor areas crafted for community connections rather than more parking. As food brings people together, the Swamp commits to not only providing the quality food from transparent sources, but also provides the spaces and plans events to enjoy those foods and build community. In light of their vision to create a just and sustainable food system that allows local farmers and food makers to thrive, in 2016, the Swamp identified a huge need in their community and were ready to take their impact on local food to the next level, ultimately resulting in the creation of the Swamp Rabbit Food Hub. The Food Hub works alongside the Swamp’s existing network of farmers and food makers and connects them with local restaurants, markets, and institutions. Most small farmers aren’t able to deliver to 100 different restaurants, but food hubs are. Most restaurants aren’t able to order from 100 different farmers, but food hubs are. In addition, in 2023 the Swamp Rabbit Food Hub used their leverage to partner with the SC Department of Agriculture and purchased $178,000 of local fruits and vegetables to be donated to families suffering from food insecurity. The Food Hub has truly been a vehicle for the Swamp to make an even bigger impact on the local economy - in 2023 alone, the Swamp purchased more than $4.7 million from local farmers and food makers, setting a new record for this mission-driven business.
